Hope you all had a great Saint Patties!!! I for one totally did š
With a day like this how could you not?!
Very different from South Beach, this beach is more low key and everything is extremely close.
But before we get to the beach let me show you my awesome breakfast!
I ran out of bananas, it was a sad morning š¦ Nonetheless I had to make due with what I had in my pantry. Used up the rest of my pumpkin to make the oats.
In my oats I have: 1/2 cup oats, 1 cup almond milk, 1/8 cup canned pumpkin, 5g flax, & cocoa powder.
Topped with: walnuts, apricot jam, cinnamon raisin pb, and chocolate granola
My latest little concoction has been to blend Casein protein powder with frozen strawberries and some xanthan gum as a thickener. It makes a huge bowl of creamy pudding
I topped it with some Fiber One cereal and it’s a great way for me to meet my protein intake. Delicious š
We took some fruits to the beach and I munched on an apple while tanning. I didn’t get in the water but it was nice to just sit in the sun and talk amongst friends. By the time dinner came rolling around I was sooooo hungry! We sat down at a place called Nick’s Bar to eat. The menu was less than appeasing but I was able to pick out a salad amongst all the burgers, chicken wings, and other fried foods.

Overall it was a fun day with some much needed R&R time. I got back home at around 10pm and felt so tired. My workout this morning felt terrible. I was hardly able to get in any pushups. I just wanted to sleep š¦ At least my body has 2 days of relaxation to look forward too.

mmMM great lookin oats girl! I spent my St. Pats at work. So it was ok. No beer either for me! Oh well…It was a nice little Thursday overall though. Got tons done which feels so good. Have an awesome day!

MMM girl-I’m totally jealous. Although it was warm here it was still just 45 degrees and freezing. I’ll take anything above zero though. š

I think i’m the only person who doesn’t enjoy pumpkin! There’s something about the texture that freaks me out! But, your bowl of oats looks great – I’d just have to find a substitute for the pumpkin.

I love making super creamy puddings and top almost everything with fiber one… i’m obsessed.
I thought my st. patricks day was beautiful, but I’m incredibly jealous of yours! I need the beach, or warmth, or sunshine, but preferably all three at once!

Oh how I wish I was at the beach now! I have been to Hollywood beach many times, my parents have a condo in Pompano Beach. I love it down there! Those pumpkin oats looks like a great way to start your day! Yummy! š

We didn’t do anything for St Pattys Day. I drank green smoothies and saw my Irish OB though š My docs names are Finnegan and McConnell. Doesn’t get more Irish than that haha

I’m a huge fan of oats so I’m drooooling over yours! š I love your idea for pudding. I bought some xanthan gum to use when baking gluten-free, which I rarely do, so it will be a good way to use some of the huge bag I have.

I just hung out with the Boy on St. Patty’s. No green beer for me this year. Oh, and I coached skating, and didn’t wear enough green.
