Wednesday’s have officially become an obsession of mine thanks to Jenn over at Peas and Crayons. Nothing better than posting up your delicious munchies while gawking over the yummy foods of others.
First up is my favorite meal of the day…Breakfast of course!
For lunch I spent the day with Frankie so we decided to make an indoor bbq
For dinner we made more of a bake
We boiled rotini pasta, cooked up chicken, and sauteed zucchini on the stove top. Then we used a pyrex to layer the pasta, chicken, and zucchini topped with Ragu pasta sauce and mozzarella cheese. This went back into the oven for about 10 minutes until the cheese was ooey gooey and melted!
Win? You betcha!

Yes I finally had OOIAJ! (or for that matter any kind of oiaj) I’ve been patiently awaiting the day until my lovely PB jar had about 1 Tablespoon left. Yesterday was that day and I was more than ready to enjoy it to its utmost potential.
In my little OOIAJ mix I put some oats, Fage, splenda, cinnamon, milk, and half of a banana.
In the morning I was amazed at how much the oats had expanded.
Today was just one of those gorgeous days where the sun was there to say HELLO!
If only it could shine this bright all the time, I swear I think people would be so much happier :)
Lunch today was delicious in it’s entirety. Curry coconut chicken with sweet potatoes. My boyfriend made this the other day with avocado instead of the potato but I really enjoyed the different texture the potato brought to the dish.
I can’t believe it’s finally Thursday! The week flew in the blink of an eye. I spent the day with my boyfriend so my meals tend to be more creative when it nears the weekend ;)
Umm chicken pad thai? Lol don’t really know what to call this except for delicious. Cooked up some spaghetti in a pot. Then made the chicken with the shawarma spice we had. The sauce on top is made out of coconut milk, peanut butter, soy sauce, and a little sriracha. Can’t forget to add some toasted sesame seeds on top :)

Unfortunately my sleep was not exactly uninterrupted this morning. I planned on getting blood work done in the at the crack of dawn because the diagnostic center where I go gets overpopulated with people after like 8am. The plan was to wake up at 7am and I did, but only because some random person decided to call my cell phone with a wrong number. Pretty convenient for me although I would have preferred sleeping in a bit more. The blood work was quick and painless just the way I like it, and before I knew it I was home and back under the covers. I already had in mind what I wanted for breakfast from last night but then I changed it in the midst of my sleep to do baked oatmeal. Unfortunately, by the time I woke up at 10 I was in no mood to wait for food so I stuck with my original plan ;)
I’m definitely happy with my decision. Breakfast did not let me down! I toasted up a low fat eggo with some cinnamon bananas and almond butter. I also had a bowl of Kashi with yogurt and fruits (there’s yogurt under there I promise). Everything was great except for the coffee :( Unfortunately I ran out of my french vanilla flavored brand and had to use a Hazelnut Cinnamon one. It wasn’t terrible but something about the taste was a bit off. I might have made it too strong. Definitely must go back to Publix and buy more of that other coffee, it’s so delicious especially with the fat free creamer.
It’s starting to feel like I’m living in Miami again. The temperature is starting to heat up. These last few days had been pretty chilly but today was like 80° and it was hot! I fixed up some school registration forms and headed to the gym for a cardio workout. It was only 20 minutes long but I worked up a sweat! By the time I got home I was starving for lunch.
Pasta will always be one of my favorite dishes. There’s just something about it that makes my taste buds tingle. While the Ronzoni noodles were cooking I started making a boca burger for protein. I chopped it up and added the already cooked pasta to the pot with the burger. Last I added Kraft Light Alfredo Sauce. Omg it was amazing but the Parmesan cheese topping really finished the job ;) Happy tummy
Now for an episode of Top Chef ;)
