First July [WIAW]

Hope everyone had a fun filled 4th of July. I got to see lots of these

It was a lot of fun to be with my family and hang out watching the gorgeous fireworks.

Today is another installment of WIAW!

Peas and CrayonsLink up with Jenn over at Peas and Crayons and post your noms

The best meal of the day begins with breakfast!

Cinnamon Burst Cheerios, strawberries, and yogurt drenched in almond milk Smile

Lunch took me back to my childhood

My dad made me a malanga porridge. When I was little or sick my dad would make this for me. It was delicious, I think the butter does the trick Winking smile

Dinner was especially unique! After showing my boyfriend this awesome spiralizer online, he bought one and we made raw zucchini. I’m convinced you don’t need to cook zucchini after I tasted this!

Raw zucchini with grilled chicken topped with pasta sauce and parmesan. Always need a good amount of cheese

I never show my night time desserts because I’m too lazy to photograph at night but what the hell, I’ll show you

This is pretty much a daily ritual. Cottage cheese, yogurt, strawberries, chocolate cheerios, Emerald cocoa roasted almonds, honey, and peanut butter. It was win peeps…Down to the last bite!

Well there you have it. I know you all ate some way tasty treats this past weekend with the holiday and all.

So do tell, what was the best thing you ate all weekend? Smile

WIAW [Grillin & bakin]

Wednesday’s have officially become an obsession of mine thanks to Jenn over at Peas and Crayons. Nothing better than posting up your delicious munchies while gawking over the yummy foods of others.

Peas and CrayonsSo link up and join the party peeps Smile

First up is my favorite meal of the day…Breakfast of course!

What’s better than having a jar of cinnamon raisin pb? Having an empty one for OIAJ!

Topped with plenty of delicious granola!

For lunch I spent the day with Frankie so we decided to make an indoor bbq Smile

Our chicken skewers with onions and zucchini and corn on the cobs were in place!

The final product! Yumm. I had one veggie skewer made just for me Winking smile

For dinner we made more of a bake

And mine

We boiled rotini pasta, cooked up chicken, and sauteed zucchini on the stove top. Then we used a pyrex to layer the pasta, chicken, and zucchini topped with Ragu pasta sauce and mozzarella cheese. This went back into the oven for about 10 minutes until the cheese was ooey gooey and melted!

Win? You betcha!

Delicious down to the last bite!

So what’s your favorite meal of the day? Lunch, breakfast, or dinner? [I vote breakfast!]

WIAW Easter Edition

Good morning bloggies!!Β

Thank you all so much for the wonderful comments regarding my boyfriend’s last post. Frankie was very happy about all the positive feedback you guys left him. I hope that if you had any workout questions that his post helped in any way and I’m always open to any other questions you’d want to ask πŸ˜€

Today I’m hopping on the bandwagon for another WIAW, Easter eatsΒ

Link up with me over at Peas & Crayons to show off your eats to everyone!

Peas and CrayonsFirst comes breakfast!!

Can’t go wrong with a bowl of chocolate nanner oats in the morning πŸ˜€

Topped with peanuts, cranberry granola, and cinnamon raisin pb

Then came my Easter lunch with the bf πŸ™‚ We He decided on stir-fry. Good idea!

Chicken with a whole lotta veggies, smothered in teriyaki sauce. It was a major win. I love anything Asian inspired, it tickles my taste buds

Dinner was a matter of my choosing and darn it I wanted to make pesto! I’ve never had pesto before I know, please don’t shun me.

This was a modified verison of pesto made with basil leaves, olive oil, pine nuts, and a laughing cow wedge

It was AMAZING. So great over the chicken and the asparagus was cooked to perfection. Not exactly your typical Easter eats but I was not complaining.

There was no egg painting or hunting, and no eating of a chocolate bunny but I had something better…

My First Ever Cadbury Egg!!

My boyfriend is the bestΒ  It was magical…No it’s not an overstatement and I’m completely serious.

Well by now you know that I love getting a bit creative with my desserts so I paired this little egg with something else

Yes my friends, a cadbury egg with some strawberry home made fro-yo.

That is how I roll

Today is another workout day and I’m hoping to break some PR’s on my bench press and push up count!!

  • What was the best thing you ate on Easter? Anyone have their first ever cadbury egg like me? Do tell πŸ˜€

Ain’t No Rest For The Wicked

Happy Humpday everyone!! πŸ˜€

Don’t ask me the reason behind my title, it’s what popped up in Pandora πŸ™‚

Today was my appointment with my Gastro and I made sure to take daddy with me. My parents are pretty old school and don’t know a lot about IBS so I wanted them to learn what I’m going through and that it’s not as uncommon as they think. My mom thought I was this anomaly for a long time (probably still does). The office visit went great, he explained to my dad what was going on with my body and gave me a different probiotic to take. I was on Align and it wasn’t working out. The pain and bloating was more than I could manage and when it started to interrupt my daily activities it soon became problematic. I was given Amitiza which is used to relieve stomach pain, bloating, etc. I’m starting on it today and taking it day by day. I was also given a series of blood work including a CBC and celiac disease testing. He is such a great doctor and my parents feel more relieved knowing the facts.

After reading Katie’s post yesterday on her Cookie Dough Oatmeal Cake I knew exactly what to make for breakfast!

My version of a boatmeal πŸ™‚ I followed Katie’s recipe except I used canned pumpkin for the applesauce, added some cinnamon, 1/3 of a nanner, and put my chocolate chips on top not inside. I also topped it with peanuts, apricot jam, and cinnamon raisin pb. Wow, this was amazing! If you haven’t tried this, get to it! Make sure you have 20 minutes to spare in the morning πŸ™‚

Today was a workout day so I was excited to work up a good sweat.

  • Deadlifts: 4 warm up sets with 5 repetitions each, and 1 heavy set with 165 lbs. I did 3 reps. It was heavy :O
  • Arnold Presses: Weight is not increasing 😦  20 lbs in each arm and I’m pretty winded as it is. Maybe for next week I’ll keep the same weight but increase repetitions instead.
  • Cable Crunches and Leg lifts to finish

More spaghetti squash with a chopped Salmon burger and cheese on top πŸ™‚

Today was great because I had another special delivery!! The great people from Chobani sent me this O_O

I love getting goodies in the mail πŸ˜‰

I’ve only tried the basic flavor fat free Chobani so when I saw what was in the box I was pretty ecstatic .

So many flavors, can’t wait to go through them and give you all my opinion πŸ˜€ I don’t even know where to start!

  • What’s your favorite Chobani Flavor?

(I think I’ll love them all ;))

Chilly Friday

This is what I woke up to

Yesterday it was 85Β°! What is going on here?! I gotta say the change of weather was pretty pleasing, I honestly felt like we had no winter this year. Unfortunately I woke up to the horror of the natural disaster happening in Japan. My condolences go out to anyone who has family there or is actually experiencing the terrible tsunami taking place. To be left without a home in the blink of an eye must without a doubt be one of the most devastating experiences known to mankind. We must all come together in times like these and push forward with our heads held high.

On a separate note, I debated yesterday whether or not I wanted to work out today, I was feeling pretty sore from Wednesday. Luckily I felt fine today in the morning so I jetted off to the gym.

Overall great workout:

  • Leg presses
  • Push ups
  • Step ups
  • Lat Pulldown
  • Wood Choppers
  • Hypers
  • Leg raises

I am so tired! 😦 But luckily I had a good breakfast to compensate for my workout.

Chocolate Nanner Oats!

My usual oat combo topped with: shortbread cookies, peanuts, chia seeds, chocolate morsels,

cinnamon raisin pb and a new addition…Apricot jam!

Gotta say, loving the jam! Yummm πŸ˜€

Today overall has been nice, hanging out with the boyfriend while he’s studying for his medical boards. So weird not having much to do but I hope I don’t start getting use to it! Makes me feel so lazy.

Lunch was awesome as it always is when I’m with him. I never get creative at home.

Spaghetti squash topped with Ragu sauce and cheese!! On the side I have chicken, can’t forget the protein πŸ˜‰ Love getting my spaghetti fix without all the calories hehe πŸ™‚

I make my squash in the microwave as opposed to the oven because when I’m hungry I want to eat NOW lol I can’t wait an hour for the oven 😦

  • Do you notice any difference cooking it in the oven as opposed to the microwave?

To be honest I thought it came out great so I probably wouldn’t waste my time cooking it in the oven. Just like my lazy girl oats I seriously haven’t noticed the difference between stove top and microwave. I think I’ve mastered the microwave πŸ™‚

And on that note I’ll leave you with a picture of me and my bf on Christmas πŸ™‚

Can’t believe it’s already March! Time flies πŸ˜€
