A Beginner’s OOIAJ

Yes I finally had OOIAJ! (or for that matter any kind of oiaj) I’ve been patiently awaiting the day until my lovely PB jar had about 1 Tablespoon left. Yesterday was that day and I was more than ready to enjoy it to its utmost potential.

In  my little OOIAJ mix I put some oats, Fage, splenda, cinnamon, milk, and half of a banana.

In the morning I was amazed at how much the oats had expanded.

It was a beautiful morning to enjoy these glorious oats that I topped with strawberries, Kashi, and a chocolate graham cracker. The calories were totally worth it, I was stuffed!

Today was just one of those gorgeous days where the sun was there to say HELLO!

Finally the rainy days were over and I couldn’t help but to take a picture of the view.

If only it could shine this bright all the time, I swear I think people would be so much happier 🙂

Lunch today was delicious in it’s entirety. Curry coconut chicken with sweet potatoes. My boyfriend made this the other day with avocado instead of the potato but I really enjoyed the different texture the potato brought to the dish.

I can’t believe it’s finally Thursday! The week flew in the blink of an eye. I spent the day with my boyfriend so my meals tend to be more creative when it nears the weekend 😉

Dinner time!

Umm chicken pad thai? Lol don’t really know what to call this except for delicious. Cooked up some spaghetti in a pot. Then made the chicken with the shawarma spice we had. The sauce on top is made out of coconut milk, peanut butter, soy sauce, and a little sriracha. Can’t forget to add some toasted sesame seeds on top 🙂

    I need to try OOIAJ! I’m so close to being able to use my Honey Peanut butter jar!! That dinner looks delish!!

        We weird OOIAJ-ers should go digging for empty butter nut jars in restaurant trash bins haha jk. Wow that’s pretty bad.

    Soooooo jealous of your warmth and sunshine! I haven’t seen the sun around here in DAYS!! 😦

    I’m going to make overnight oats in a jar of “Naturally More” that I have that’s emptying. Well, ok, it probably has about 5 or 6 oz of peanut butter in it but that should make it all the better 😀

    Mmm OIAJ I also have yet to try that, but I’m workin’ on a jar in my fridge 😉 Unfortunately I tend to go through them relatively slowly on my own… Unless I bake cookies with them (see most recent post haha).

    i can never get overnight oats to turn out right. you have to share your secrets.

      All in the greek yogurt 🙂 I was using dannon light and fit and the oats weren’t thick enough

    I was just going to throw away the jar that I used last night for my ooiaj when I relized I could just keep the jar, slather it with a favorite nut butter inside and make oats in a jar whenever I want 😛

    Yum to the OOIAJ! I have yet to try that. And that’s awesome you’re having such beautiful weather, too. It’s supposed to be in the 60s here tomorrow, too!
