The Joke’s On Me

We are finally in April! Hope you all had a great April Fool’s day and no one got pranked on (at least too bad ;)) My darling boyfriend decided to text me at the gym telling me we had to break up because there was someone else. Me, being completely oblivious that it was April Fools totally believed him!! Luckily he called me 2 seconds later to say it was a joke. Nonetheless the joke was on meĀ 

I had a great breakfast before my workout. I got the idea from Kate and her Big Bad Mama Jama Overnight Oats who followed Katie’s voluminous oat trick and turned them into overnight oats.

This was my final product

The texture was very different than any kind of oats I’d made before. As soon as I pulled it out of the fridge in the morning it was really thick. I topped it with peanuts, cinnamon raisin pb, and 1/2 of a 100 calorie snack pack.

Btw if you’re wondering how many oatmeal toppings I have in my pantry, I decided to take a picture :D

I also decided to try the Lemon Chobani that was sent to me as a lovely gift from the people at Chobani

I promise there is greek yogurt under there. I topped it with cereal, banana, strawberries, and chocolate chips morsels.

I gotta say I like the lemon, it’s not too pungent. Better than the peach in my opinion :)

No day is complete without some kind of ice cream ;)

 

Strawberry Cottage Cheese Ice Cream

By far the healthiest “ice cream” ever.

The ingredients:

  • 17 ounces of Cottage Cheese
  • 1.5 cups of frozen strawberries
  • Splenda to sweeten
  • 1t vanilla extract
  • 1 cup water
  • 1/3t xanthan gum

Blend ingredients until the cottage cheese has a whipped texture and the strawberries are completely blended. Add to ice cream machine!! It might just be one of the tastiest we’ve made in the ice cream maker.

Btw did you all know it’s National PB&J Day?! I didn’t have any jelly, how shameful :( I’ll make up for it tomorrow.

    Haha—my pantry looks very similar to yours. I have to be careful if I need something from the back, because my piling and balancing isn’t always very sturdy.

    We went to our first Major League ball game of the season today with some friends ~ it was a super day! Tomorrow is all about R & R.

    Cottage cheese ice cream :) Yum! I was addicted to cottage cheese when I was pregnant. I would go through tubs of it! lol

    I celebrated national pb and j day! You should’ve added peanut butter to your ice cream and it would be like peanut butter and strawberry jam. I definitely want to try that because I love cottage cheese!

    I’m not clever enough to pull pranks and no one pulled any on me so I suppose it was a good day. Ha. I agree though, I’m not a big fan of peach and fruit greek yogurts but I do enjoy putting the fruit in there myself.

    That ice cream looks so good! I used fat free cream cheese in mine, I bet it had a similar texture! Hopefully your bf made up for that mean April Fools joke!

    I have so many oatmeal toppings too! Although, most of mine is my collection of nut butters ;) I seriously have over ten jars of different seed and nut butters. They’ve kind of taken over the pantry :)

    OMG that ice cream looks AMAZING!!! I don’t have any xanthan gum… do you think it would work without it?

    Very glad that your boyfriend was only joking! The principle at my school tried to trick everyone into thinking that they had to retake CSAPS. I was kind of hoping that he was telling the truth because I’m a junior and more CSAPS would mean more half days of school ;)

      Over 10 jars?! Ok now I am jealoussss

      I’ve never made my ice cream without xanthan gum because I don’t use whole fat milk so it wouldn’t get as creamy. Protein powder has xanthan gum so maybe throw some in there :)

    Look at all of those oatmeal toppings! YUM! I’m pretty sure when I have my own kitchen someday there’s going to be an entire cupboard dedicated to oats and oatmeal toppings. :)

    Glad you liked the overnight oats! I haven’t had success with those yet…I’ll keep trying when it gets warmer out, but for now I like my warm oats. :)
